BLUE OYSTER
(Pleurotus ostreatus)
- Excellent nutty flavor, very meaty mushroom
- Superb replacement for meat in any dish
- Cap and stem both edible, cap most delicate part, thick calamari-like stems

PINK OYSTER
(Pleurotus djamor)
- Umami (meaty) flavor
- Serves as a great meat replacement or side for any dish
- Majority of mushroom is cap, very little stem

YELLOW OYSTER
(Pleurotus citrinopileatus)
- Mild nutty flavor with slightly sweet aftertaste
- One of our most delicate mushrooms
- Very tender caps, thin Calamari-like stems

LIONS MANE
(Hericium erinaceus)
- Elegant flavor and texture similar to lobster/crabmeat
- Makes a wonderful seafood replacement
- Entire mushroom is very dense and edible

BEARS HEAD
(Hericium americanum)
- Similar to Lion's Mane with a more delicate texture and sweet flavor
- Makes a wonderful seafood replacement
- Entire mushroom is very dense and edible

KING
(Pleurotus eryngii)
- Scallop-like flavor
- Makes a wonderful seafood replacement/vegan scallop
- Excellent texture throughout, meaty stem and cap
