VL's Signature "Lobster" Rolls
- 1 lb. Lion’s Mane Mushrooms, pulled apart into bite size pieces
- 2 tbsp Olive Oil
- 2 tsp Old Bay Seasoning
- 1 tsp Salt
- 1/2 tsp Pepper
- 1/3 cup Mayo (or Vegan Mayo)
- 2 tbsp. Lemon Juice
- 2 tbsp. Fresh Dill - Chopped
- 1/2 Small Red Onion - Diced
- 6 Sandwich Rolls
- Pull apart Lion's Mane mushrooms into bite size pieces.
- Dry sauté Lion’s Mane mushrooms in a pan over medium-high heat
- After mushrooms have released their moisture, add olive oil, old bay seasoning, salt, and pepper. Sauté for an additional 1-2 min.
- Remove seasoned mushrooms from pan and allow to cool.
- In a large bowl, combine cooled mushrooms, mayo, lemon juice, onion, and dill to create your “lobster roll” filling.
- Toast sandwich roll. Top with arugula and filling. Serve immediately.
