VL's Signature "Lobster" Rolls

INGREDIENTS

  • 1 lb. Lion’s Mane Mushrooms, pulled apart into bite size pieces
  • 2 tbsp Olive Oil
  • 2 tsp Old Bay Seasoning
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/3 cup Mayo (or Vegan Mayo)
  • 2 tbsp. Lemon Juice
  • 2 tbsp. Fresh Dill - Chopped
  • 1/2 Small Red Onion - Diced
  • 6 Sandwich Rolls
  • Arugula

INSTRUCTIONS

  1. Pull apart Lion's Mane mushrooms into bite size pieces.


  2. Dry sauté Lion’s Mane mushrooms in a pan over medium-high heat
  3. After mushrooms have released their moisture, add olive oil, old bay seasoning, salt, and pepper. Sauté for an additional 1-2 min.


  4. Remove seasoned mushrooms from pan and allow to cool.
  5. In a large bowl, combine cooled mushrooms, mayo, lemon juice, onion, and dill to create your “lobster roll” filling.
  6. Toast sandwich roll. Top with arugula and filling. Serve immediately.
